We are based on the search of flavors and aromas that are naturally in our Guatemalan terroir.
Carlos González founded Toj Balam in 2019, born into a family of small coffee growers in the Antigua region of Guatemala. Behind the brand there are multiple generations that dedicated their lives to coffee as peons in the coffee plantations in Antigua.
After exploring the speciality coffee movement for several years across the world, he saw the potential to go back to Guatemala to start a project in his family’s farm. From the start it was clear that coffee grown in Guatemala has great potential though to produce something exceptional we needed to systematically analyse and enhance every production step. Taking inspiration from wine growers, picking only the ripest cherries with the necessary sugar to develop their full potential of flavors. From this we can start to taste the Guatemalan terroir.
The motive is to understand how to extract the best from every coffee variety and plot of land from the seed to the cup. To share this great pleasure with every coffee lover.
